The Whisky Bar at Dornoch Castle Hotel
For whisky lovers, the whisky bar at Dornoch Castle is one of those places that quietly exceeds expectations. Tucked within the historic hotel, the bar manages to feel both deeply traditional and quietly world-class; part cosy Highland pub, part serious whisky destination.
Inside, you’ll find an impressive selection of bottles from across Scotland, including a rotating line-up of small-batch releases, independent bottlings, and the occasional rare dram that you’re unlikely to come across elsewhere.
The selection is carefully curated to showcase different regions and flavour profiles, but there’s just as much emphasis on tailoring the dram to your tastes.
Guided tastings are held regularly, often down in the 15th-century vaulted dungeon (atmospheric in all the right ways), and have earned something of a reputation among whisky enthusiasts in the know.
However, on our last visit, we took a more relaxed ‘DIY’ approach. In part because we had spent the day on the Black Isle and arrived late, but mainly because we were looking to the incredibly knowledgeable staff to recommend a few drams.
We experienced a curated, personalised whisky flight to enjoy by the fire. Along with a local craft beer, we particularly liked the Springbank 15 and the Glenlivet 12, while the Glenmorangie Sherry Wood Finish provided a sweet ending to the evening.
History, Heritage & Hospitality
The building itself dates back to the 15th century, having once served as a bishop’s palace before becoming the hotel it is today. That sense of history is ever-present, from the thick stone walls to the vaulted cellar spaces below, and it lends real weight and authenticity to the whisky experience here.
Today, the hotel is run by the MacPherson family (the same family behind Dornoch Distillery), who have owned and carefully restored the property for decades.
Their approach is rooted in Highland hospitality: warm, personal, and quietly passionate about quality. That ethos carries through into the bar, where the focus is on thoughtful curation rather than sheer volume, and where the team take genuine pride in guiding guests toward something memorable.
